My Favorite Corn Dip

I posted an easy salad recipe a few weeks ago that you all can make home and you guys LOVED it (click here to get the recipe). I said this last time and I will say it again, I am not a professional but I do enjoy sharing easy things that I love putting together in the kitchen. This next little recipe is one of my favorite dips/salads to make year round. I got the recipe when I was in high school from one of my good friends moms and I have been making it (year round) ever since!

This dip is great on it’s own, with chips or even on top of nachos or lettuce (to make a bigger salad). The beauty of this recipe is that you can add more or less to it depending on what you enjoy. See below for the recipe and I hope you enjoy as much as I do. xx

Corn Dip/Salad

  • 1 can of white corn
  • 1 can of yellow corn
  • 1 can of black beans
  • 1 avocado
  • 2 tablespoons of your favorite Italian dressing (or more if you like more!)
  • cilantro (depending on how much you like)
  • shredded cheese
  • salt + pepper to taste
  1. rinse tomatoes, corn, cilantro and black beans (dry off excess water with a paper towel before putting them in a bowl together)
  2. slice avocado and add to the mix
  3. mix ingredients
  4. add two (or a little more) tablespoons of Italian dressing
  5. mix all together
  6. add salt + pepper to taste
  7. mix all together again
  8. add shredded cheese
  9. mix all together again
  10. Put in the fridge to chill for a bit or serve immediately
  11. Enjoy with chips, on it’s own or over a bed of lettuce!
