Can you believe it’s already June 17th…aka three days away from the first official day of summer? In summer’s past, I’ve kicked off the season with a trip to Paris, poolside get-togethers and even a 90th birthday extravaganza, but for this year I thought that in honor of the first day of summer, I would share a few of my poolside essentials and mix up the perfect poolside cocktail for you.
Whether I am in Dallas or somewhere else, going to the pool with friends is one of my favorite things to do. I mean who doesn’t love sitting by the water, sipping your favorite cocktail and catching up with friends? While the poolside company is always important, one thing that is just as big of a deal is the cocktail you bring along.
You may remember this post that I did a couple of months ago, where I mixed up a great Viniq cocktail to celebrate the Spring. This Summer, I decided to “bring the shimmer” poolside with a delicious Bay Breeze cocktail made with Viniq Original. Viniq is one of the most fun liqueurs I’ve ever experimented with! Its beauty and shimmer makes every cocktail moment insta-worthy, not to mention its taste of citrus, berry and peach is super tasty. Not only is this cocktail recipe absolutely delicious and beautiful, but you can also whip it up with just 3 simple ingredients, so it’s super easy to make, just throw in a pitcher/cooler and toss in your beach bag.

Bay Breeze Shimmer
– 2 oz. Viniq Original
– 2 oz. Pineapple
– 2 oz. Cranberry
Chill all ingredients prior to serving. Pour all ingredients into a tall, ice filled glass (or your favorite pitchers if taking to the pool with friends) and stir. Enjoy!
